Easy Cheesy Fish

This is a light fish dish, perfect for the summer, but also comforting and satisfying. The cheesy breadcrumb crust on this fish provides texture, as well as a nice saltiness. It’s perfect with a light, refreshing salad. It’s quick and easy to make, so a perfect weekday meal.

As with many of my recipes, it’s also really flexible. I have used smoked basa for this, a slightly cheaper version of smoked haddock, but if you prefer white fish then you can use fillets of this too.

A little tip when it comes to cooking fish – whatever the packet instructions say, take off two minutes. Fish can be overcooked so easily, making it chewy and removing a lot of the flavour. It’s much better to take it out slightly early, as you can always cook it slightly more if necessary. Just remember that thinner fillets take far less time to cook than, say, a chunky fillet of salmon.


Easy Cheesy Fish

This recipe takes 20 minutes to make and serves two. A blender is useful here, but not essential.

You will need:

  • 40g bread (approximately one slice)
  • 40g grated extra mature cheddar cheese
  • Handful of fresh parsley (or 1tbsp dried if you can’t find fresh)
  • Zest of one lemon
  • 1/2 teaspoon freshly-ground black pepper
  • One tablespoon olive oil
  • Two smoked haddock (or alternative fish) fillets, about 175g each
  • Side salad and vegetables to serve

Preheat the oven to 190°C (170°C Fan/Gas Mark 5/375°F).

Begin by blitzing the slice of bread into breadcrumbs. If you don’t have a blender, just use your fingertips to break into breadcrumbs. Add the grated cheese, fresh parsley, lemon zest, and black pepper. Blitz together, or combine in a mixing bowl, until well-mixed.

Place the two fillets of fish in a roasting dish and drizzle the olive oil over them. Rub the oil over so there is a light covering on each fillet. Pat the breadcrumb mixture over each fish fillet – there should be a reasonably thick layer on each.

Place in the oven and cook for approximately 10 minutes – you’ll know it’s cooked when it’s flaky and no longer translucent. Whilst the fish is in the oven, you can prepare any sides you’ll be having with the fish.
