When making meals such as gnocchi, it’s a shame to throw away your baked potato skins as they can be turned into such a tasty snack. Keep them to one side and make whilst you are waiting for your dinner to cook, or keep in the fridge for a day or two until you are ready to make them.
Crispy Potato Skins
This recipe takes 10 minutes.
You will need:
- Potato skins
- Olive oil
- Salt and pepper
- Dips, such as mayonnaise or anything else that takes your fancy
Preheat your grill to a medium heat. Rub the skins the olive oil, salt, and pepper. You can experiment with other spices if you like, just be careful as some may go bitter after being under the grill.
Place under the grill for 5-10 minutes until crispy. Serve with dips of your choice – mayonnaise, pickles, and mustard-mayonnaise are our favourite combinations, but even something simple like ketchup works perfectly.
